For All Charcuterie and Cured Meat Products

Do the products need to be refrigerated?

Not Immediately. All of the meats we feature are cured, sealed, and shelf stable, meaning they’re designed to handle transit without refrigeration for several weeks.

We work closely with our artisan partners to ensure that every item included in your box is suitable for safe, unrefrigerated delivery.


What if the packaging says "Keep Refrigerated"?
Some products may have labeling that recommends refrigeration — but don’t worry. These instructions are based on retail storage, not shipping conditions. Rest assured, we only include products that are shelf stable and safe for shipping without ice packs.

What should I do when my box arrives?
For best quality and freshness, we recommend:
  1. refrigerating products after they arrive
  2. always refrigerate after opening any item
  3. store in a sealed container or wrap to preserve texture and flavour
How long will they last?
Unopened and refrigerated, most of our cured meats will last for weeks, if not months, depending on the product. After opening, refer to the label for specific use-by timelines, but a good rule of thumb is to enjoy within 7–10 days. If you refrigerated an item, remember to let it come to room temperature before serving for optimal flavour and texture.

Can I Freeze My Charcuterie?
Yes — most of the meats we feature at Carnivore Club can be frozen if you want to extend their shelf life. While freezing isn’t necessary for short-term storage, it’s a great option if you’re saving your snacks for later or buying in bulk, just remember to thaw and let it come to room temperature before serving.

For All Frozen Meat Products
If you’ve ordered one of our frozen products, proper storage is key to keeping everything fresh, safe, and delicious. Here’s everything you need to know about caring for your frozen items once they arrive.
Shipping & Transit
All frozen products are shipped with insulated packaging and ice packs to maintain safe temperatures in transit. While items may arrive partially thawed or cold to the touch, they are safe to refreeze as long as:
  1. the product is still cold upon arrival
  2. there is no unusual odor, leakage, or discoloration
Upon Arrival
When your box arrives:
  1. unpack your items immediately
  2. place all frozen meats directly into your freezer
  3. if any items are needed within 1-2 days, store them in the refrigerator
Freezer Storage Guideluines
  1. most frozen meats can be safely stored in the freezer for up to 6-12 months, depending on the cut and packaging
  2. keep products in their original vacuum-sealed packaging for best results
  3. if you open a package and want to refreeze, wrap tightly in plastic wrpa and place in a freezer-safe bag or container
Thawing Instructions
To maintain texture and flavor:
  1. thaw in the refrigerator overnight
  2. avoid leaving meat to thaw at room temperature
  3. for a quick thaw, place sealed meat in a bowl of cold water and change the water every 30 minutes
